Satay (or "saté") is a dish of marinated skewered  grilled meat, form the Indonesian or Malayan region.

  • Preparation time: 20 minutes
  • Marinating time: 2 hours
  • Grilling time: 20 minutes
  • Makes about 2 dozen skewers, 4-6 servings.

INGREDIENTS

  • Ingredients for the sauce:
  • 2 tablespoons peanut oil
  • 1/2 cup minced onions
  • 2 tablespoons minced garlic (or garlic paste)
  • 1 tablespoon minced fresh ginger root
  • in a pinch, you can use ginger powder
  • 1 tablespoon wine vinegar
  • 1 tablespoon brown sugar
  • 1/3 cup creamy peanut butter
  • 1/2 teaspoon ground coriander
  • 2 tablespoons tomato ketchup
  • 2 tablespoons soy sauce
  • I prefer Indonesian "ketjap" soy sauce for this sauce; it does not taste the same as Japanese soy sauce!
  • When I use Japanese "Kikkoman" style soy sauce, I use the "light" variety, as "regular" is absolutely loaded with salt.
  • 1 tablespoon lemon juice
  • 1-3 dashes hot red pepper sauce

  • Ingredients for the chicken and marinade:
  • 500 grams (1 lb) boneless, skinned chicken breast
  • 2 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1 tablespoon dark sesame oil
  • 1 tablespoon peanut oil
  • 1 tablespoon lemon juice
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger root
  • 1 pinch of salt and freshly ground pepper
  • 1-2 dashes of hot red pepper sauce

EQUIPMENT & SUPPLIES

  • BBQ grill
  • Wooden skewers
  • Some vinegar
  • Medium size bowl

PREPARATION / DIRECTIONS

  • General:
  • Soak the wooden skewers in water and some vinegar for at least 30 minutes. Make sure the skewers are covered by the water (you may have to put some weight on them, e.g., a saucer)

  • Instructions for the chicken:
  • Cut the chicken into strips of about 5x1.5 cm (3 x 1/2 inch)
  • In a medium size bowl, combine the soy sauce, sherry, peanut oil, sesame oil, lemon juice, garlic, ginger root, salt, pepper, hot sauce, and mix
  • Add the chicken, and toss to coat
  • Cover, and refrigerate for 1-2 hours

  • Instructions for the peanut sauce:
  • Heat some vegetable or peanut oil in a small saucepan over low heat
  • Add the onion, garlic, and ginger
  • Cook and stir for 5 minutes, or until soft
  • Add the vinegar and brown sugar
  • Cook until sugar dissolves
  • Remove from heat and stir in the peanut butter, coriander, ketchup, soy sauce, lemon juice, and hot sauce
  • Blend until smooth and set aside

  • Ingredients for the skewers:
  • Thread marinated chicken pieces onto the soaked skewers
  • Cook on the grill until cooked through
  • If you don't have a grill, put them on a baking sheet and bake/broil in a 190 °C (375 °F) oven for 5-10 minutes, turn once.
  • Serve immediately with sauce for dipping, or cover with sauce
