This is a quick-and-easy chicken recipe.

INGREDIENTS

  • 6-8 boneless chicken breasts, cleaned
  • 1 cup chopped yellow onions
  • 1 cup coarsely chopped green peppers (paprikas)
  • 3-4 cloves of garlic, cleaned and minced (or 1 tablespoon minced garlic paste)
  • 360 ml (1.5 cups) of water
  • 1 bottle (400 grams ; 14 oz) of tomato ketchup
  • 1-2 tablespoons of curry powder
  • 1-2 teaspoon dried thyme
  • 1-2 teaspoon ginger powder
  • Salt and pepper
  • 2 tablespoons olive oil

EQUIPMENT & SUPPLIES

  • Frying pan
  • Oven dish with lid

PREPARATION / DIRECTIONS

  • Pre-heat the oven to 175 °C (350 °F)
  • Place the chicken in a casserole
  • In a frying pan, sauté the onions, bell peppers, and garlic in the olive oil until lightly browned
  • Add the water, ketchup, curry, thyme, salt, and pepper and mix well
  • Pour the sauce over the chicken, coating each piece
  • Cover and bake in the oven for 1 hour

SERVING & GARNISH SUGGESTIONS

  • Serve over steamed rice
