This is a quick-and-easy chicken recipe.
- Preparation time: 15 minutes
- Baking time: 1 hour
- Makes 6 servings
- Best when made a day ahead
- Can be frozen
INGREDIENTS
- 6-8 boneless chicken breasts, cleaned
- 1 cup chopped yellow onions
- 1 cup coarsely chopped green peppers (paprikas)
- 3-4 cloves of garlic, cleaned and minced (or 1 tablespoon minced garlic paste)
- 360 ml (1.5 cups) of water
- 1 bottle (400 grams ; 14 oz) of tomato ketchup
- 1-2 tablespoons of curry powder
- 1-2 teaspoon dried thyme
- 1-2 teaspoon ginger powder
- Salt and pepper
- 2 tablespoons olive oil
EQUIPMENT & SUPPLIES
- Frying pan
- Oven dish with lid
PREPARATION / DIRECTIONS
- Pre-heat the oven to 175 °C (350 °F)
- Place the chicken in a casserole
- In a frying pan, sauté the onions, bell peppers, and garlic in the olive oil until lightly browned
- Add the water, ketchup, curry, thyme, salt, and pepper and mix well
- Pour the sauce over the chicken, coating each piece
- Cover and bake in the oven for 1 hour
SERVING & GARNISH SUGGESTIONS
- Serve over steamed rice
