As the name suggests, this is a recipe for Mashed Potatoes, that is suitable for making a day before serving

  • Preparation time: 30 minutes
  • Bake time: 90 minutes
  • Makes 8-10 servings (8 cups).

INGREDIENTS

  • 3 lbs (1½ kg) medium sized potatoes, pared
  • 1½ cups (360 ml) sour cream
  • 4 tablespoons butter
  • 1½ teaspoons salt
  • ¼ teaspoon freshly ground pepper
  • Optional: ½-1 tablespoon minced garlic
  • ¼ cup (4 tablespoons, 10 grams) bread crumbs
  • 1 tablespoon butter, melted

EQUIPMENT & SUPPLIES

  • Large bowl
  • Hand-mixer
  • Small saucepan

PREPARATION / DIRECTIONS

  • The day before serving:
  • Boil and drain the potatoes
  • Combine potatoes, sour cream, the 4 tablespoon butter, salt and pepper
  • Beat with electric mixer at low speed until blended
  • Beat at high speed until light and fluffy
  • Put lightly into a 2 quart (2 liter) casserole, cover and refrigerate overnight
  • 2-3 hours before serving: remove from refrigerator
  • 1½ hour before serving: bake covered at 325 ºF (165 ºC) for 1 hour
  • In a small saucepan, melt 1 tablespoon of butter, toss in the bread crumbs, and sprinkle on top of the mashed potatoes
  • Bake 30 more minutes, uncovered
