As the name suggests, this is a recipe for Mashed Potatoes, that is suitable for making a day before serving
- Preparation time: 30 minutes
- Bake time: 90 minutes
- Makes 8-10 servings (8 cups).
INGREDIENTS
- 3 lbs (1½ kg) medium sized potatoes, pared
- 1½ cups (360 ml) sour cream
- 4 tablespoons butter
- 1½ teaspoons salt
- ¼ teaspoon freshly ground pepper
- Optional: ½-1 tablespoon minced garlic
- ¼ cup (4 tablespoons, 10 grams) bread crumbs
- 1 tablespoon butter, melted
EQUIPMENT & SUPPLIES
- Large bowl
- Hand-mixer
- Small saucepan
PREPARATION / DIRECTIONS
- The day before serving:
- Boil and drain the potatoes
- Combine potatoes, sour cream, the 4 tablespoon butter, salt and pepper
- Beat with electric mixer at low speed until blended
- Beat at high speed until light and fluffy
- Put lightly into a 2 quart (2 liter) casserole, cover and refrigerate overnight
- 2-3 hours before serving: remove from refrigerator
- 1½ hour before serving: bake covered at 325 ºF (165 ºC) for 1 hour
- In a small saucepan, melt 1 tablespoon of butter, toss in the bread crumbs, and sprinkle on top of the mashed potatoes
- Bake 30 more minutes, uncovered
